Bay Shrimp Appetizer
1/2 lb bay shrimp
1/2 c finely diced celery
1/2 c orange, yellow, or red pepper, finely diced
4 green onions, finely diced
1/4 c Dulcet Lemon, Mustard & Dill Sauce
2 pinches Cayenne pepper
Fresh black pepper and flaked sea salt (to taste)
Baguette slices, toasted or Belgian endive leaves
Garnish: Zest from 1 lemon
1. Toss the ingredients together and season with cayenne and black pepper.
2. Arrange the shrimp mixture atop toasted baguette slices, or into Belgian endive leaves.
3. Top each with a garnish of lemon zest and flaked sea salt.
Hint: To make it really simple, add lemon zest to shrimp mixture, place in a decorative bowl and serve with a platter of toasted baguette slices, and allow guests to make their own.
